Hyssop (Hyssopus Officinalis) is a perennial herb from southern Europe and the Middle East. This compact, shrubby plant reaches only 2-3 feet tallΒ with slender dark-green stems and violet-blue flower spikes. The scent is sharp, something between mint and sage. Hyssop is used for herbal teas, cough syrups, essential oils, soaps, aromatherapy blends. As a hardy perennial in Zones 3β13, it comes back each year without fuss and self-seeds if you leave the flowers to mature. Hyssop herb flowers attract bees and other pollinators.
