About

Chives (Allium Schoenoprasum) is a hardy perennial herb native to Asia and Europe. Chives produce neat upright clumps of hollow grass-like green shoots, which are 12 inches tall and 6-12 inches wide. In late spring to early summer, they produce round fuchsia flower heads that are edible, mildly onion-flavored, and attractive to bees and butterflies. Chives are hardy in USDA Zones 3-11.

How to Grow & Harvest

Sowing & Timing

Sow Allium Schoenoprasum seeds about a 1/4 inch deep. Start indoors 8 to 10 weeks before the last frost, or direct sow  in early spring or fall when the soil is about 60°F. Make sure to keep it moist, as chive seed is tiny and won't push through a dry crust. Onion Chives seeds sprout in 7-14 days in good conditions. Mix seeds Chives with a pinch of sand to space it evenly on a tray.

Soil, Watering & Fertilization

Chives herb require full sun — at least 6 hours a day. While partial shade is okay, the shoots are weaker and the taste gets worse. Well-drained rich soil with consistent moisture is perfect, as wet roots cause rot and dry soil slows growth and makes leaves unpalatable. Established clumps can survive short dry spells with no complaint. No special soil preparation is necessary, but adding compost before planting ensures a strong first season.

Growth & Harvest

Space the plants 6-12 inches apart. First harvest occurs in 60-90 days. Don't pick until the shoots are at least 6 inches tall. Cut them off about an inch above the base. It'll regrow quickly. Pick it throughout the season, but don't pick all the shoots in one go. Deadhead the flowers as they fade to keep the energy in the leaves. If you plan to harvest seeds, let a few flowers to mature. Divide the clumps of the plants every 2-3 years to keep them strong.
