Big Max Pumpkin (Cucurbita Maxima) is a huge heirloom vegetable weighing from 60 to 100 pounds, while the circumference can get up to 70 inches under optimal growing conditions. It is native to South America and has been cultivated in North America since the 19th century. The plant is a warm-weather annual, thriving in the USDA Zones 3-9. It develops a dark orange color once ripe and the 4-inch-thick flesh is suitable for pies, bread, and other pumpkin dishes. Apply nitrogen-rich fertilizer early in the season for vine development, then switch to a phosphorus-heavier mix once flowering begins. It takes around 120 days before the Big Max is mature. Harvest when the skin is orange-colored and tough enough to resist a fingernail. Cut the fruit with a stalk of at least 3 inches long, and let it dry under the sun for a week.
